I recently purchased a barely used Remington 31 in full choke simply for its beauty.
What was the intended use for such a shotgun?
What would they be used for today?

My answer to both of your questions would be:
"Anything that could or can be hunted with a shotgun."
Back in the 1950's, when I started hunting with something larger than a .410, I used my grandfather's pump action Marlin (exposed hammer) 12 ga. with 30 in. full choke barrel. It was (and still is) a fine shooting gun. When I got my OWN, first 12 ga. in 1968.....a Remington 870, it had a 30 in. full choke barrel. If you have shots at smaller game or closer shots, you may have to let them get a little farther out......or shoot them in the head.
On larger species like sage grouse, prairie chickens, pheasants, geese, etc......they're "just the ticket".
These days, you wouldn't want to use steel shot in them, but you could use some of the lead substitutes that wouldn't ruin a barrel, for waterfowl hunting.
