The shield on the hammer spur is very common among Octagon Top Sporting rifles. I have 5 octagon top sporting rifles that all have that same shield shaped checkered area.

Unfamiliar with the terminology of "ears" as it pertains to a Rolling Block? But here's an image of the breech block face. Can't see any signs of it having been something else earlier?

My mistake. But it seems the change to the flat breech blocks took place around the same time frame as the introduction of centerfire chamberings.

Since it's a centerfire, it has the flat breechblock. I believe all the concave breechblocks were rimfire calibers during this era? Or am I mistaken?

Considering all the places Remington serial numbered the early Sporting Rifles, it would be easy to pull the forearm and buttstock to see if all numbers match on the barrel, frame, triggerplate, etc. I also think it's likely an assembled gun from more than one. .32 caliber would indicate a squirrel rifle, or target rifle to me.

Pretty tough to give any history with such limited photos and no description. A full length picture and closeup of the lock and trigger(s) plus caliber info would help a lot.

Are you certain it's "GFW" and not "CFW"? It may possibly be .32-20 Winchester, which occasionally got marked CFW for centerfire Winchester.
Check to see if it's a CF firing pin, and do a chamber cast to determine the caliber for sure.
